Hi I'm very interested in folding, is it possible for be to put a older 7970 into my current PC and fold using only the 7970.

Will my drivers flip shit having two non crossfire compatible cards in the same system?

AFAIK as long as you don't connect the Crossfire bridge there won't be a problem. They will just run as separate cards.

My Current Build: 

Intel i5 3570K @ 4.4GHz 1.11V, Cooler Master Hyper 212 EVO, Asrock Z77 Extreme4, Corsair Vengeance 8GB 1600MHz, Samsung 840 EVO 250GB, Asus GTX 760 DCII Overclocked, Corsair CX600M

hmm how will games know which one to use lol. Also a R9 290 doesn't have a CF bridge ;)

I'm am pretty sure you can set a primary graphics adapter in Windows or I think if you plus your display in the your R9 290 is will default to the primary graphics adapter.

Yes, without crossfire enabled - your system just uses the primary card as your main display and doesn't even bother with the second card. Once you load FAH up, you can either Pause the client on the R series if you want to fold on it occasional, or just delete that slot altogether and only fold on the 7 series...
