5.3Ghz is a single/double core boost speed:

4.9Ghz is the all-core boost:
Quotethe all-core Turbo Boost of 4.9GHz
Of course there is some small variance between chips, so 4.8 and 4.9 Ghz are about even with each other.
So it comes down to the 5.3Ghz is only for single-core tasks.
Of course you could try to overclock further, but nothing above the speeds you're getting now is guaranteed.
