Does this build seem like a good idea?
The 5600x isn't the best value CPU. An 11400 or a 11400f if you don't care about an iGPU is a much better deal.
That CPU cooler is probably a bit overkill for that chip since it only uses about 80W even under full load. (With the Intel CPU and with power limits removed, it may be necessary to have that beefy cooler. Keep that in mind.)
The cost of those two drives could get you one 2TB NVMe drive, unless there's a specific reason you're going for two instead of one.
The GPU is a tiny bit underpowered, and I'm sure even after this whole GPU shortage retailers will be trying to get rid of their 2060s for the same price as you can get a 3060, so just look out for better value GPUs, though a used 2060 for under $250 would be a good deal especially if you're playing esports games.
My last change would be the PSU. Get a good bronze/gold 600/650W PSU from EVGA, Corsair etc. You'd be able to reuse that PSU in another build in the future if you wanted.
