Need some advice and help with picking out the core components for a new build

Hello everyone, I think it's time to start on that new build I've been in desperate need off for like 2 years now. I was told that the price influx in pc parts has toned down a little and I'll be starting to look out for some parts here and there. But I still need some advice on what I should be getting.
 

1. Budget & Location:
Netherlands / Belgium, €1800 (including a case and all that's inside, not including peripherals) 
 

2. Aim:
I just want a responsive system with which I can crank some game settings and run it just fine.
Games: Grand theft Auto 5, Rainbow Six Siege, F1 2020, Squad, Mount and Blade Bannerlord 2, City Skylines
Software: Autocad (very minor use, no big assemblies), Eplan, TIA portal V16, Siemens Simatic S7, Microsoft office, web browsing and OBS (I record a lot of my game play, not for streaming)
 

3. Monitors

I just ordered 3 new monitors, all 27" 1440P 144Hz. Mostly for multitasking purposes. I do not plan to game 3x 1440P at 144hz, just 1 screen at 1440P 144Hz should be good for those earlier mentioned games. However, having other things open on those 2 extra screens while playing at high settings would be ideal.

 

4. Peripherals

I will be needing some new peripherals at some point, but not until I actually have a good system. So there will be time and budget for that later.
 

5. Why are you upgrading?

On my previous build I cheap'd out on every single component, which was a mistake. Case is just horrible, I only used the included case fans, which are terrible, I5-7600 with the stock cooler, Asus prime B250 and a 1050ti. It doesn't run games very well. Minimal settings on everything basically. And the 1050ti only has 1HDMI and 1DP, which won't work with my new 3 screen set up, let alone resolution wise. And lastly, both my 1TB HDD and 250GB SSD are always near full. I'll probably re-use the drives and sell old the system without one. Or maybe it's beter to leave them in the old system? I don't know.
 

6. Please, No Dream Builds

So I was thinking of going team red this time. Some people recommended me a Ryzen 5 3600, with a B550 board. And I'd like 32GB of ram if possible within the budget. If not 16GB will do for now. The drives I have right now are a Seagate Barracuda 1TB for games and footage + a Samsung 850 Evo 250GB SSD for my OS and software.

So what I'm looking for is some advice on the core components. CPU, mother board, psu, gpu, ram and drives. The case, fans and general theme of the build I'll decide on later once I know my core components. I think a ryzen 5 3600 would be a good fit for me but when I go look for a board I just don't know what to choose and why, I don't know what ram clock speed goes with which board, Do I want a M.2 SSD or a regular SSD? And some other stuff that I'm clueless about. On my previous build I just sorted by cheapest so it wasn't too hard to figure out what worked together. So if you guys can help me pick out some specific parts that would be amazing. Thanks in advance!

Cheaping out on stuff isn't that bad, if you know what to cheap out on. Instead of a Ryzen 5 3600, look into a Ryzen 5 5600X. Cheap out on the motherboard, psu, even RAM. Go for 16GB (2x8) at ~3000MHz, anything more than that is pretty pointless. And with the rest of the budget, put everything into a GPU. Everything.

5600x is going for 370 euro, a sharp increase from the 3600 at around 200 euro. The 5600x is overpriced there.

Some notes:

  • Picked a 5600X instead of the 3600. It's current gen, and quite a bit faster. 
  • The B550 Tomahawk is a solid board, with BIOS flashback function (so you can update if needed to support Zen 3 CPUs).
  • 32GB of good RAM.
  • All SSD storage, 500GB M.2 boot drive (will be very fast), with slower SATA 1TB for games and general use.
  • GPU is out of stock right now, so I left a little bit of budget in the built in case you need to go with something other than the founder's edition.
  • All-black theme (with basically no RGB, but if you want some it can be added on later).

Just a heads up: the global PC component market is in complete turmoil right now. Some of these components may be way above MSRP, so you should verify before buying.

Still a much better chip than the 3600, though. And a 70 euro markup is preferable to how it is in North America (out of stock forever).

Considering he can just opt for 16GB RAM, but yes it doesn't really make up for it. A 3600 seemed a bit underwhelming with what he wants out of it. I guess a 3600 with the rest of it put into a GPU

If I were to buy a new gpu, it would definitely be something like a 3060 / 3060ti / 3070. I'll just have to wait till they do come out here.

I build this back in late 2017, and it was already obsolete within 2 years. There is basically no good way of upgrading it either. I'd need a new case, new cpu (maybe a new motherboard as well?), new gpu, new power supply. So I better just build a entirely new system. The samsung 850 evo and another 8gb of kingston are not on this screenshot but are in the system right now btw.

I just regret every decision I made on that pc.
