I want to change the white on my Galaxy Tab 3 to black like my S4 mini but i don't know how.

Get Cyanogen(if you can) on them, its relatively simple to do. Also check out themer its quite a cool launcher currently in beta.

Sadly there is no stable version of Cyanogen mod available for my tab 3 and I'm not going to risk installing a experimental version.

I run nightlies on my nexus 4 and I've never had any problems

Take a look for some custom ROMs

Once you get it you won't go back
