I'm pretty sure they use open test benches for most of the tests. Only when you see full build, or something where components being inside the case would have importance they are in the case. They tend to use be Quiet! cases due multiple sponsorships.

 

Linus has talked about their testing methods in WAN Shows. The short of it is that they focus on things where the environment shouldn't play major role. Jayz2cents does he's benchmarking on test bench, OC3D uses some Corsair case from couple years ago. The main thing being that system should go through as few changes as possible to keep data comparison valid.

I don't think they've used a be quiet case or been sponsored by them for quite a while. If I recall their last Be Quiet video was the $1000 build guide, back in 2017.

Looking at the past few videos featuring full build where the point is not the case and its not sponsored:

So I was wrong about be Quiet! being preference. Though I have vague memory of seeing much of those in videos after the sponsorship. Overall, good for LTT showing off multiple cases for the builds.
