You don't need an "amazing computer" for some zoom classes, word and chrome. 

The more I learn, the more I realise I don't actually know anything.

As Vals89 showed in their recommendations, you should switch to an nvme ssd.  Not for any performance reasons, though nvme is faster than a SATA ssd, but simply because it means that you don't have to run a SATA cable and SATA power to the 2 1/2" drive.  Also, I run a 5700xt GPU and can wholeheartedly recommend it.  It performs really well for the price.

In what way? I managed to squeeze a 5700XT in there which is orders of magnitude faster than a 1660ti. You never mentioned what is your priority? High refresh rate gaming? High resolution gaming? Huge processing power? For the budget you have, there will be compromises.
