Has anyone tried to put an Mini-ITX in a C64?

Hey all! This is my first post!
Budget (including currency): $2000AU

Country: Australia

Games, programs or workloads that it will be used for: Webpack Bundling, .NET CORE and React.js coding

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): 

I have one of those full-sized "The C64" remakes. I popped it apart, and it looks like the keyboard is hooked up to the motherboard by a single USB header, which got me thinking about turning it into a USB keyboard. However, what I thought would be much more fun is to convert the thing into my primary driver for work(Software Engineering). Has anyone ever tried getting a MINI-ITX board in a Commodore 64 before? Any resources you can link? 

My plan was to chuck a Ryzen 5 3400G or something in, or move to *shudders* intel, for some more power with IGPU. I can't image it would have the height clearance for a dedicated graphics card.
As far as cooling goes, I am guessing I would need to create a custom water cooling solution with a single rad 120mm intake on one side, and a single 120mm vent on the other, unless anyone else has a better idea, again because of the height limitations.

You could do a low profile gtx 1050. Yes, it would have to be side mounted, but it would work.

Or maybe this, idk, but this http://www.inno3d.com/products_detail.php?refid=509 may be able to work if you put in with video out on the side

I honestly didn't think of side mounting it, but that's a really easy solution, assuming I can mount the card off the ground.
