Budget (including currency): aprx $2500 CAD

Country: Canada

Games, programs or workloads that it will be used for: 1080p video editing, (might move towards 4K if me and my friends get upgrades to our film setup), engineering renders and simulations, 1440p gaming, raytracing minecraft ofc. i will be overclocking this

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): 

This is my current PC build wondering if i could get any advice on how it would perform under these tasks and if i should change anything around. help for the motherboard, monitor, and cooling would be greatly appreciated. I'd like to purchase and build this by the time August or September hits.

CPU: ryzen 7 3700x ($500)

GPU: rtx 2070 super (confused on which version to get) ($800)

RAM: trident z 16gb 3600mhz (considering spending a bit more and getting 32gb) ($150 or $250)

MOTHERBOARD: asus x570-pro (i dont know much about these) ($350)

STORAGE: 1tb intel 660p SSD / 2tb seagate HDD ($250)

MONITOR: no clue preferably something with high colour accuracy and 1440p at 144hz ($500-700)

CASE: lian li pc-011 razer ($250)

COOLER: I'm conflicted on whether or not to get an AIO or air or a custom loop. Would go for the loop but it is very expensive so i am shying away from that, an AIO seems perfect but ive heard that they can get quite loud, and air cooling aesthetics aren't my thing. 

PSU: i believe something around 750W would be good for this build

I do have an alienware PC that I've been using since 2017 that i am considering selling, if anyone could do an appreciation of its value that would be amazing

RAM: 16gb 2666mhz

MOTHERBOARD: no clue probably a base dell motherboard

STORAGE: 256gb NVMe SSD / 1tb HDD

PSU: 460W

Keep your Alienware for a few more months, and buy 4000 gen Ryzen and 3000 gen Nvidia when it comes out.

Buying now, as we're so close to new launches, makes absolutely no sense.

 

As for your build, part wise it's decent. I'd get a different SSD, something a little better. Custom loops are a lot more maintenance than an air cooler or AIO; something to keep in mind.

 

Don't bother asking what your PC is worth; just go to your local classifieds, see what it's worth there, and post it. Values vary far too much for you to get a relevant number; last year I sold a card for $450, I'd have been lucky to sell it for $275 in the city I lived in before. Market value can vary drastically.

If you were to buy now, I'd recommend something along these lines:

 

but, I agree with @dizmo that it might be wiser to wait until later this year for AMD's Zen 3 on the CPU side and Nvidia Ampere and AMD RDNA2 on the GPU side, since you'll likely be getting quite a bit more for your money then. The system you currently have is still solid imo.
