What's your system and what are you looking at? Many many "performance" videos on youtube are fake.

may be same gpu, but cooling, cpu, ram ammount and or speed, and other specs may be diffrent, so your gpu may throttle cause of cooling.

is it possible your pc is using igpu?

if not igpu run after burner in the game in question to get temps while playing

Run benchmarks and compare against trusted reviewers like HardwareUnboxed or Gamers Nexus

How much lower? Are you on the exact same setting as them? What games?

agreed, vary nice temps. i guess compare ingame settings, and do what @5x5 suggested.

something like better grass or aa can tank fps.

That means nothing

A 5% difference is normal

It's within range

Make sure it's the same res , same graphical fidelity and same specs ( exactly same specs )

If that's true enable xmp / docp

Ddu the drivers

Make sure the benchmark video didn't have any sort of XFR / pbo enabled

If they do , enable pbo / XFR
