The way I calculate it is: CPU power + GPU power + 100W.

For you that is: 150W + 105W (x2) + 100W = 460W.

So yes, an RM850 is plenty.

 

I am just somewhat confused by the dual RX 5500XT cards.

do not get 2x 5500 XT's. you wont notice any performance upwards more like you will notice worse performance, more heat and noise, ANd they consume lots of more power than rx 5700

I Use my knowledge as business owner and self taught technician aswell as an AI to help people. AI might be controversial but it actually works pretty well 90% of the time.

Yes, i know, can i use two GPU independently without crossfire ?, one for video rendering and one more for triple monitor setup

Having multiple monitors does not really put much of a strain on your GPU, so you don't need to get one for that purpose. :)
