I am thinking of upgrading my desktop to be the best i can get for a 2 way SLI GTX 1080 for gaming and some video editing and rendering. I have done some looking around, and found that the i7-9700K processor would be a great fit for that build, but I am kind of worried about the 16 PCIe lanes. Therefore I have tried to find another processor at about the same price- and performance range, and I found the i7-9800X (With 44 PCIe lanes)

Now I would like to know which one of these I should go for. (The price is about the same)

(I have to get a new motherboard and RAM anyway, so that wont be a choosing factor)

I would also like to have 2 NVMe M.2 SSDs, and I don't really know exactly how the PCIe lanes work With that, but I have read they use 4 each, but that that is a different kind of lanes, idk.

But should I go for the i7-9700K or the i7-9800X (or do you have better recommendations)?

Dropping to 8 lanes with those gpus won't make a big differnce, so id go  3700x here. The extra lanes just won't make a big differnce. Or wait till the end of this month and see what 10th gen comet lake does to the dekstop parts.

THe nvme ssds will use the chipset pcie lanes, and won't affect the gpu.

Id also consider selling those gpus and getting a single faster gpu so you don't have to deal with the sli issues.

I’d say it depends on the games.
My 8700k barely handled one 1080.
So if you are gonna play something cpu intensive and expect high frames, I’d get the best cpu you can afford.

Main RIg Lian Li O11 MINI, I7 9900k, ASUS ROG Maximus XI Hero, G.Skill Ripjaws 3600 32GB, 3090FE, EVGA 1000G5, Acer Nitro XZ3 2560 x 1440@240hz

Spare RIg Lian Li O11 AIR MINI, I7 4790K, Asus Maximus VI Extreme, G.Skill Ares 2400 32Gb, EVGA 1080ti, 1080sc 1070sc & 1060 SSC, EVGA 850GA, Acer KG251Q 1920x1080@240hz

The Ryzen 9 3900X is only like 20% more expensive than the Ryzen 7 3700X, but it seems like extreme overkill for a gaming pc, so I think I will go for the Ryzen 7 3700X

I would assume a GTX 2080 Ti would be the best suited replacement for a GPU, or do you have a better recommendation, maybe on the AMD side?

2080ti is the best you can get for gaming now. Thats what id get if you want the best gaming gpu. 3700x seems like a good fit here too. AMD doesn't have any gpus that compare to teh 2080ti now.
