One of my mechanical keyboards is beginning to malfunction and double (even multiple) registers with certain keys.

Most of the malfunctioning keys are at the bottom row of keys, sometimes the entire row malfunctions sometimes its just one or two keys. Granted the keyboard is some Chinese off brand keyboard with unspecified brand of switches and I've had them for nearly over a year and was one of my first mechanical keyboards.

I wanted to know how to identify if the problem is with the switches themselves or if it was with the PCB, and if it is possible to fix it. I do have other keyboards I could use but I keep this around to save some desk space.

Is this an issue when you just press one key at a time, or when you are typing fast? 

e.g. if you type V and C separately do they work, but when pressing them in quick succession/together do they give an issue?

a little bit of both actually sometimes it would only happen when I'm typing fast, sometimes it would happen as soon as I press a single key. Say I'd press 'M' and it would register 5 times, sometimes it would double register in the middle of typing a sentence, on rare occasions it won't register at all.

Used to have a Corsair K90 that used to do this, I think the reason it did it for me was because I used to bottom my switches out all the time and it would occasionally cause them to bounce and generate more than one signal.

The first thing I thought of was maybe broken diodes, which might cause multiple different keys to be 'pressed' by one key (on a specific row or column).

I'm kind of suspecting the PCB, rather than the keyswitches themselves though.. But there is really no way to say for sure, until you have been able to measure the different routes over the PCB.

I had a similar issue with Razer. twice. My original Blackwidow ultimate had the o key repeat and the Blackwidow Chroma had the a key repeat.  I went to corsair and haven't had any issues, I assume it's probably the switch, since there isn't a warranty I would try disassembling it and if you have the means to desolder and disassemble the switch if possible.  If you can't disassemble the switches I would look for replacements and replace just the switches.
