So I have a 75hz monitor and cap games at 90fps. Normally, 75hz would equate to 75fps. I know the difference between 75 and a number like 100fps is noticeable on a 144hz monitor but is it gonna be noticeable on a 75hz monitor? Will I notice a difference between 75 and 90 or not all considering my monitor is a 75hz one?

No difference. Your monitor can only display 75 Hz so that's all you get. You might end up with some more tearing when running at 90 vs running at 75

You cannot see above 75fps on a monitor refreshing at 75Hz, no exceptions.

So long as your frame rate is at least as high as your monitor's refresh rate, you shouldn't see the artifacting that's present when the frame rate is too low, your computer is just throwing away those extra frames. There would be a noticeable difference in smoothness between 75fps and higher, especially in fast moving FPS games that can be jerky with low refresh rates or low frame rates, but you're off to a good start.

Of course between 75fps and 90fps on a 75Hz screen you won't see more frames, but what you might notice is the improvement in frame times.

In a perfect world, the 75fps and 75Hz would line up perfectly, but in the real world the next frame could be made a little before or even earlier before the frame is actually drawn.

 

This will make it so having more fps (even more fps than your monitor refresh rate) will give you more up to date recent frames more often.

The blow image kind of shows what I am saying. The first 'graph' shows a perfect world, where your PC has a 100% consistent frame creation (which is not the case in real life), real life is shown in the second graph, when you have about the same average fps as your monitor's refresh rate.

The third example shows you getting (a lot) more fps, which makes it so the frame creation and the frame shown are closer to each other.

This of course is a dramatization and may introduce more tearing, but shows how having more fps than your Hz may still help.
