Well, if you have the money for a new motherboard and CPU,  instead of just a CPU, coffee lake 8th gen or 9th gen is the way to go. 

 

If you don't have the money for a motherboard, kaby lake is it

 

I recommend the 8700k because z370 is cheaper and an 8700k is cheaper than a 9700k

Obviously if you're going to spend money you should look at the i7 9700K instead as the i7 7700K does not represent enough of a performance boost to justify any spending.

9700k of course, not like 7700k is that cheap to buy anyway

 

as for 8700k vs 9700k, don't be fooled by similar performance and lower price on the 8th gen CPU, it isn't soldered so cooling is quite a bit worse unless you delid.

Ryzen 7 2700X (8C/16T) and call it a day. Better for video editing than the 9700K, and much cheaper. (see below for a comparison between the Ryzen 7 2700X and 8700K (6C/12T) which is on par with the 9700K at 8C/8T).

 

You'd need a new motherboard anyway so you might as well go Ryzen.
