The i7 9700K is compatible with Coffee Lake 8th/9th gen motherboards, but preferably used with the overclock ready Z370 and Z390 chipsets.

For example ASUS Prime Z390-A Motherboard LGA1151 (Intel 8th and 9th Gen) ATX DDR4 DP HDMI M.2 USB 3.1 Gen2 Gigabit LAN https://www.amazon.com/dp/B07HCY7K9L/ref=cm_sw_r_cp_api_i_Xd8bCbGCZE1E7 would work correct?

Yes it would however prefer the Gigabyte Aorus line up as ASUS Z390 motherboards have an awful built quality with bad VRM and Power Phases and ASUS hardware is known to be too Overpriced.

It can work with both Z370 and Z390 chipset motherboards (I'm not going to mention any of the crappy chipsets) but Z370 motherboards will need a BIOS update in order to work with the 9700K.

Yes, Z390 chipset motherboards won't need a BIOS update to work with 9th Intel CPUs like the 9700K.
