Are all tubes compatible with all fittings, etc?

Not all fittings match. Some can be matched in soft tubing. Check the sizes or the rads/blocks then you should be able to match a tube.

Found some Primochill tubes I wanted, then found some EK ones that looked worse, but they were the same company. What should I do! (I'll be using EK stuff for mostly everything but the tubes)
