They're paid to sell you crap. That's it. Every time they make a video telling you what you want they're getting money for it. Don't let their "old therefor bad/maximum capitalism" mentality force you to dislike what you have.

No. The chips price to performance ratio is not linear at all. You pay a premeum to have that much speed on a single chip/system. The cost does not directly reflect the amount of performance gained.
if your workload can be split up to multiple systems , then it should be.
Because several consumer grade chips will outrun a single threadripper pro if the task threads can be allocated separately.

It should last a few decades depending on the manufacturing quality of the board. Typically a chip should last well over several decades without issue. The boards tend to be made much worse than the chips and may need swapping.

your gpu temps are fine.
It probably has more to do with the relationship between the software and age of the hardware. More than likely the game is expecting more cpu/ram/drive speed than you actually have and is resulting in hitches. while the game can run at 120fps in specific instances , not every aspect of the game can operate quickly on older hardware so the machine will have to play catch up every now and then.
