Get the 1080 ti it has 3GB more VRAM which will allow for more complex textures and more pixels, which in your case is a big deal, as you have 3 4k monitors, you just will have to live without DLSS and Raytracing.... you should survive.

For the same price get the 2080 obviously. I'm sure you could find a 1080 Ti much cheaper than $750, in which case I would buy that.

It's really a split of whether or not you care about ray tracing. Which isn't out yet... But anywho the 3Gb additional buffer does have some impact as in Rise of The Tomb Raider on a gtx 1070 ti in dx12 mode with the highest texture setting, I use more than 8gb of vram at 1080p. just food for thought. On an off topic, why wont the 1070 ti use more than 7.5Gb ram nvidia? cough cough 970.

2080 future proof

In his case I will argue that the 1080 ti would probably be more future proof as he has more VRAM, and will be able to handle the more demanding textures that are sure to plague games in the future, he will also have larger frame buffer for his 3 4k monitors.
