Just google what the service/application are used for. unless and unwanted features are depend on each user use case. For example SMB, you need to enable this if you want to share folder with other computer on your network and allow you to connect to SMB shares. Hyper V, you want this for virtual machine and applications which some do or not use. NFS for different network sharing protocol and list goes on. The default enable is left as it is, imo.

.net frameworks are required for some(many) applications and games to run at all. Just become you have 4.7, doesn't mean that every softwares and games will automatically use that one, if they were made with the old version, they will need that old version.
Powershell is mostly for powerusers so if you don't use command lines, feel free to disable it, but the impact on the system will be minimal.
Work folder can also be disabled.
