I want to take a crack at this. One question, though: what is the maximum budget?

Only two things I would recommend considering.

  1. Get a 250GB SSD instead. 120GB is on the low side of things once you get the OS and all your programs installed. I'd recommend at least 250GB for the SSD. Check out the WD Blue 250GB SSD and the Crucial MX500 250GB SSD. They come in both 2.5" SATA SSDs as well as M.2. If it's within the budget then the 500GB would be an even better choice, and would allow you to install a few of your favourite games on to the SSD to improve loading times.
  2. You don't need a 750W PSU. A good quality 450W or 550W will be a much better choice for that system, and you will save some money (maybe even save enough to upgrade to a higher capacity SSD!). Depending on what is available in your location, some good units to consider would be the Bitfenix Whisper M 450W, Bitfenix Formula Gold 450W, Seasonic Focus Plus Gold 550W, Corsair RM550x, or Corsair TX550M.

CPU: Intel i7 6700k  | Motherboard: Gigabyte Z170x Gaming 5 | RAM: 2x16GB 3000MHz Corsair Vengeance LPX | GPU: Gigabyte Aorus GTX 1080ti | PSU: Corsair RM750x (2018) | Case: BeQuiet SilentBase 800 | Cooler: Arctic Freezer 34 eSports | SSD: Samsung 970 Evo 500GB + Samsung 840 500GB + Crucial MX500 2TB | Monitor: Acer Predator XB271HU + Samsung BX2450

I plan on picking up the parts one at a time so I'd like to stay reasonable but upgrading isnt really a problem

Case: Thermaltake - Versa N21 ATX Mid Tower Case

The Versa N21 is pretty dated in terms of its aesthetics and design. You can get much nicer cases for under $55.

Have a look at some of these and see what you think. Obviously it's a personal and aesthetics choice, but you should be able to get something a bit more modern than the Thermaltake N21 if you want to.
