Migrating/Upgrading to Solid state

I'm currently running off of a 2TB HDD (or SSHD rather) and would like to upgrade to Solid state.
I had a 500GB M.2 boot drive and a 500GB SSD for games while retaining the old hard drive to access files (images, documents etc.) that I'd still want access too occasionally.
Most if not all my games (which take up the bulk of the 2TB disk) are steam based and therefore can be easily reinstalled. Id also like to conduct a new install of windows on the M.2 off of a Bootable USB.

Whats the best way to go about this? is it feasible? are there better options? things I should look out for/take note of before attempting any kind of storage upgrade? I haven't delved much into booting and storage etc. so any advice would be very welcome. cheers,

Do this with only one drive plugged into the computer^

 

Ideally you would move the games and documents off of the HDD, reformat the HDD using windows disk management (to get rid of the multiple old system partitions) and move the games and documents back to the clean HDD.

Why copy from one drive to another and then back? When old Widows HDD will no longer be a system drive, it's easy to just delete old system folders, remove unnecessary partitions and extend existing one to the maximum using (for example) MiniTool Partition Wizard. 2TB is LOT of data - why copy that amount of data if not necessary? This requires another 2TB drive - so it's not only time consuming process but also costs money.

 

Ok, Steam games can be downloaded again and install again (as @Ranger515 said), but downloading 2TB of data will takes lot of time.
