Get a single larger SATA SSD like a 2TB Crucial MX500. Remember that any spinning rust(HDD) is going to be a huge bottleneck while video scrubbing. If you get a Crucial or some Samsung SSDs, their SSD toolbox software allows you to assign some of your RAM as a fast buffer, which helps for alleviating write pressure in I/O intensive workloads as well as prolonging the NAND lifespan. You might want to consider that if you use an uninterruptible power supply, which you should also have in a $5k build.

 

A 1080ti is a complete waste for occasional gaming and unless your video editing software uses FP32 GPU acceleration you're better off with something smaller like a 1070, and focusing on CPU, amount of RAM and fast large storage as well as overall RAS features for the system.

 

Those monitors are low quality with poor color and theyre 1080p not 4k. You need a 4k monitor with at least accurate sRGB gamut coverage for editing 4k video.

 

Get a better PSU like a Seasonic G or X series. I dont see a battery backup in your $5k build which is a huge oversight especially for what is supposed to be a workstation.
