i m going to build a new pc with
i7 8700k
gtx 1070
z370 motherboard
16gb ddr4 3000mhz
corsair vs650w psu
2tb hdd

i m going to use this rig mainly for gaming by pairing it with a 144hz samsung monitor
my question is that ,
how future proof is my rig ?

It'll be fine for the next 2-3 years depending on your expectations.

z370 is a dead socket but the 8700k is the best gaming cpu anyone will see for almost a year.  That just means there is no cpu upgrade path.

gtx1070 will push current games to 100+ fps with high+ settings, over time you'll need to lower settings to keep the frames up.

16gb of ram should meet every game minimum for many years

2tb hdd should be plenty fine, can always add another one if needed or uninstall something if needed.  I would suggest a 240+ ssd for the OS and main games

Nothing is future proof, I built an x99 machine 2+ years ago and hated it from the moment I put it together, I built a z270 machine a little over a year ago and want a z370 just because the new cpu's are epic.  My point is that the instant you build a computer there is going to be something SO much better.  You have to decide whether you want to wait for a new launch and pay a premium while dealing with supply shortages and buggy hardware/firmware, or go with a seasoned product with a hopefully lower price, high availability/selection and seasoned drivers.

One random thought I've had is that gpu prices should be coming down, I'm not even running my 3 once profitable gpu's on crypto because not only the dollar value is under 1/3 when I started but the actual coin payout is a fraction of what it was, killing any hope of stock piling crypto.  I went from $300/mo to $60/mo in return.  That plus the looming next gen release should mean lower prices, at least I hope.  But again when card's launch availability is very low and prices are high (that's what it was like when I bought my 1070FE and this was pre-crypto).

Audio go Brrrrrr

3 years at least, more than that is hard to say because of your expectations, game's requirements on hardware and the power supply that is likely to fail.

Intel is screwing up everything right now. Don't trust that they reuse the chipset. Even if they would just release one gen more for z370 before z470 is released.

Why would one want to use a dated chipset that does not support newer tech?

The argument that one can continue to use a several year old chipset with a newer cpu is truly a red herring. It is just a marketing line promulgated by AMD and its cheerleaders.

What is the difference between z170 and  z270 for the average user?

Not sure what you are trying to argue.

Had Intel worked things so that Coffee Lake cpu could run on Z/H170 motherboards, the new memory controller stock operation at DDR4-2666 would not be allowed. Nor would support for Optane technology, nor more than 1 or two NVMe drives, nor memory speeds above ~DDR4-3800 be possible.

I am not assuming anything. I get what you are talking about. But my point is that saying "z370 is dead" is actually quite a bullshit. It is current chipset and you cant get anything better right now. So you can maybe call a z270 or z170 dead but not the z370. Btw was just trying to get the idea behind that statement.

With AM4 having 4 year support a upgrade from a 7 1800x to a 7 5800x would be worth it.

Don't confuse chipset and socket.

AMD has already introduced a new chipset for AM4. How is this any different than what Intel does?
