It all depends on the manufacturer's warranty system. If there's nothing wrong with it you'll obviously get the card back. If it's a manufacturer defect the manufacturer will deal with it in their own way.

If there's nothing wrong with it, they'll send the original card back--if they even let you RMA it in the first place.

If there's something wrong with it that they can fix on the existing card, they'll fix it and send the original back.

If there's something wrong with it that they can't fix on the original card and they have other working (usually refurbished) units of the exact same SKU in stock, they'll send that back.

If there's something wrong with it that they can't fix on the original card and they don't have any other working cards of that model on hand (or at least none they're willing to eat the cost of as an RMA), they'll send back a "comparable" card, usually another model of the same GPU or, if the original card is out of production, a newer GPU that performs similarly.

That's pretty much it. Unless it's a Gigabyte card. Then they'll put it on a table, forget about it for a month until someone notices your emails asking for status, realize that the GPU they've been using as a paperweight/coaster is actually a customer's property, drop kick the thing a few times, then tell you that physical damage/abuse isn't covered.

I enjoy buying junk and sinking more money than it's worth into it to make it less junk.

I do wonder what if I buy a used gtx 1080 and send it in for warranty(even if it's not broken). Do I get the same card back or do they replace it?

Sounds like dishonesty. Trying to pay used prices and get a new card.
