Could I run 2 LG 34inch 2560x1080 ultrawides gaming on one and web browsing on the other with a single GTX 1080?

sure. I run an lg 34um58-p 34" and a benq gl2460 (1920*1080) on a 1060. See specs below

If it is just a 1080p monitor(even if it's ultrawide) you could go with as many as your number of ports on the GPU.
