This is the situation: 

I'm planning to expand my current home network to the building next door.

The distance is around 40m (130 feet)

 

The purpose of building, is that people can rent it to have a party and I'd like to supply wifi (max capacity: 100people)

 

My question is now, which cat cable should I buy?

both cat5 and 6 have a maximum length around 100m. The main difference is that cat6 supports the 10 Gbps whereas cat5e supports up to 1Gbps.

 

If your network doesn't support the 10 Gbps or you don't plan on upgrading then just get cat 5 e

Cat5e supports up to a gigabit per second which is 1000mpbs, aka, more than even 100 people would ever need at a party.

Just get Cat6 its better overall and isnt too much more expensive

if you "Build" a house and this cable will be plant inside the wall then get cat6

 

Though this is for wireless, I rather focus on what kind of access point that could handle 100 devices (assuming 1 person only use 1 device, because I know some people use 3 phones, 1 table, 1 mac, and 1 laptop)

Please keep in mind that Cat 6 only supports 10Gbps up to 55m. Only Cat 6a and Cat 7 guarantee 10Gbps up to 100m.

 

So if you are interested in future proofing the wiring (not a bad idea for permanent installations), I'd examine the cost difference between:

Cat 6

Cat 6a

Cat 7

 

Compare the prices, and see how much stepping up to the next standard will cost you. And then simply make a decision.

 

On paper, Cat 6a and Cat 7 support the same specs (10Gbps up to 100m), but Cat 7 runs on a higher frequency, which helps reduce crosstalk and EMI, etc, so in theory, it's possible that Cat 7 may support higher Ethernet standards as they are released (Eg: 40Gbps up to 55m <- Note: speculation only).

Cat5e is good for 1 gbps.  The latest 802.3bz standard extends this to 2.5 gbps.

Cat6 is good for up to 5 gbps / 100 m and 10 gbps for up to around 55m on the latest 802.3bz standard. May not be 55m, i don't remember the exact number, but personally wouldn't use it for more than 30 meters with 10gbps anyway.

Cat6a/Cat7 (officially there's no Cat7) can do 10gbps for up to 100m

 

For outside, you should use FTP or SFTP cable, that's ethernet cable with an extra shielding around the wire pairs, but regular ethernet cable would also work.

The distance is small enough that you may as well just go with Cat6a cable.

Cat 7 is an official standard, just from a different body.

 

Cat 6a (and all the previous Cat specs) are IEEE standards. Cat 7 is an IEC standard. IEEE technically doesn't recognize Cat 7, but that doesn't change the fact that it is indeed a standard.

 

Apparently Cat 8 is coming down the line, but that's also an IEC standard.

Although you may not need it and cat5e would be plenty, I would go ahead and get cat6 because the price difference is not awful and it will prevent you from having to rerun the wiring if something comes up in the future that requires higher than gigabit speeds.

 

Gigabit sounds fast but it really isn't especially when it comes to file sharing and such...

 

If you would like to future proof and not have to go through the whole PITA process again, just buy cat6.

It has been decided then. 
I'm going for Cat7. Gonna put 2 cables in, just in case one gives up in a couple of years.
