You should go with the i7 8700K and wait for Volta to come out.

Volta is the next-gen unreleased NVIDIA architecture. 

It will probably only make it slower by a bit, nothing serious for consumer chips. This whole thing has been overly blown up.

Given the latest on Intel... I would probably go with AMD now.
