How reliable and stable are steam servers in general?

Will it make any difference to Origin or alternatives?

Who has the best?

Using Steam, Origin, and Uplay all depends on what game you want to play. Origin is strictly for EA games (except for a few games like Witcher 3) and Uplay is for Ubisoft only games. Steam has the best library and selection of games and only games that really use Steam servers are valve made games like CS:GO, TF2 and etc. Most other multiplayer games use their own dedicated servers hosted by the game creators themselves or by players who pay to have servers running for said game. There are some games you can buy on steam but will require you to download launchers from other companies as well. Like Tom Clancys The Division, you can buy it on steam and launch it from steam but it also requires you to download Uplay as well and create a Uplay account to be able to play the game.

All in all, it's easier if you just go ahead and download all three Steam, Origin, and Uplay unless you just don't plan on playing Ubisoft or EA games period.

To continue on with the server thing, it just depends if the game host it's own server or not. Like Origin doesn't really host any servers. Pretty sure DICE are hosting the server for Battlefield and Battlefront while FIFA servers are completely separate from that.

Origin is a necessary Evil for Origin only games.  That being said, I buy things else ware if at all possible. Origin is a buggy mess a lot of the time and just tends to do a lot of random and weird stuff. Steam is awesome and I can say that I have downloaded over a terabyte of games at a time unmonitored without issue via steam multiple times.
