Which of these file formats should I choose for DOS ?

Exfat and FAT32 works best for non Windows systems, NTFS for Windows. If you're talking about old-school stuff like Windows 95, 98, DOS, Windows 3.1, then use FAT16.

Yeah, it’s just that fat32 is mostly useless for anything with more than 8GB of capacity.
