Disclaimer: I can't help you on pricing because I don't know the australian market at all.

Overall looks good but a few improvements:

  • If you're gonna get a Z270 board, fork out the little extra for the 7700k
  • Why do you have a wifi adapter? Try using ethernet, as wifi may not be able to transmit at the speed you need to stream (idk what res you're doing, so that's up to you to decide.) Keep in mind this is a maximum of 300Mbits/sec

Z270 boards are a lot more and their only benefit over H270 is that they can overclock

Then, I would suggest getting a H270 board or even a B250 board to save a few buck. For 1080P, you don't need a GTX1080. A GTX1060 6GB will do you fine.

My Ethernet cable isn't long enough but I have good enough net to stream without it. But if I'm not going to overclock what motherboard should I get?

Don't stream with wifi. Just buy a really long ethernet cable.

I suggest you do, with Ryzen you could get a 3.6-3.7 ghz overclock pretty simply.
