Sure, go for any of them. Greta upgrade! Make sure you get Ryzen 1600 because 1400 might not max out some of these GPUs

Get the 1600.

The stock cooler is good enough and 1400 only has half the cache of the other cpus in the lineup.

The extra cores on the 1600 will definitely help in gaming. Even if the game itself can't used them, the ability to have the os and game on separate cores will boost fps.

Side note, If you're planning on overclocking I've heard elsewhere not to get gigabyte motherboards as they don't overclock well. Take with a grain of salt as not from personal experience.

1600 and upgrade cooler later. Stock cooler seems pretty beefy though (I've only taken it out of the box once so I can put it back in. AIO FTW)

Get the 1600. The cooler is fine and if you want you can upgrade later. Having 6C/12T is gonna last you longer and some games are actually starting to use more than 4 cores so don't bother with the 1400 unless you're really strapped for cash.
