Why blue though? What about a sober PSU like the Corsair RMx and live with it or perhaps take the sticker off another PSU?

Corsair HX/HXi as well, some old TX was blue iirc

Any psu can be made blue with a lick of paint  You could probably use plastidip on it. The question is why do you need a specific colour psu ?

Most of the blue power supplies I've seen have been cheap units in flashy housings.  You may be better off getting a known high quality PSU, mask off the vents and black parts you want to stay black, and spray paint your choice of blue.  A can of spray paint and a roll of painter's masking tape shouldn't cost more than a few dollars.
