Yes you will. Look at chips like the e5 2643 v4. Thats a 3.4 gig 6 core that supports dual socket. Its about the same speed as the 7900x and costs 3 grand for 2 of them. No reason to get xeons here.

X299 isnt a bad bet. You can look into xeons off second hand market. Might not be bad choice. Also most dual cpu boards wont have things you get on consumer platform. Good audio, wifi, lots of i/o. They will have raid support and dual ethernet and ecc support.
