It depends. If you want to play games maxed out on it then you will need something like a 780/Titan or dual R9 290.

If you just want to use Chrome on all three then something like a 7970 or maybe even a 7950/7870 would be fine.

 

We need more info, what is your use case?

What games? Budget? What settings do you want to achieve?

Depending on: What's your budget? Playing across all the monitors? What games? What settings? How many fps do you need? Why would get 3 1080p ones? (IMO a single 1440p one is the way to go. Atleast i did it)

Usually I would ask for specs of your rig and what you expect, but since you don't have a budget and gave no further info...

 

nVidia:

Get a GTX 780 Ti SLI and you are going to have beastly power maxxed out all games balls to the wall and tons of OC potential.

 

AMD

 

Get a R9 290X CF and you will have pretty much the same power, I would wait until the non reference coolers asre out if you prefer this.

 

Whatever you buy this would be highend, just make sure your PSU is strong enough.

I'd get a 290 with a decent cooler. If you're not satisfied with your FPS, get a second one, new CFX scales a bit better and stutter at atypic res, like yours was fixed as well.
