My personal favorites that match these criteria are the Bioshock, Deus Ex, Metro, Witcher, Dishonored, and Dark Souls games.

As for brand new games, so far this year my personal favorites have been Nier: Automata and Prey.

The only Assassin's Creed games I've ever been able to play for any length of time were Syndicate and the 2D ones (China, India, Russia). I know my opinions are probably in the minority on AssCreed games, though.

None of those games are particularly "sequential" in terms of story. You definitely don't need to played previous releases to enjoy the later ones.

My personal opinion is that Bioshock and Bioshock 2 are superior to Bioshock Infinite. Dark Souls III is probably the easiest one to play if you are unfamiliar with the series because of the more polished/modern controls and interface, and the fact that Dark Souls I on PC requires some modding to get it to run as it should. Dark Souls II is generally considered the weakest of the series.

On a side note for the Dark Souls series, I'd strongly recommend playing them with an Xbox or PS4 pad. If you don't have one, you may want to wait until you do.
