It's hard enough getting 1080p maxed settings 144fps+. I don't think you will be able to get 144fps+ (near max settings) without a gtx 1080. However, watching benchmarks helps.

1440p @144Hz ... I think you need a GTX1080 and quite possibly an i7, not i5

and PS: FreeSync doesn't work with nVidia, in case you didn't knew

I knew that free sync is amd but g sync monitors are much too expensive

instead of the 1080p144hz, would a 21:9 ultrawide 2560x1080 @75hz or a 16:9 2560x1440 @60hz be better for the gtx 1070

if youre not going to do any content creation, I don't see the value in getting a 6700k, the cost:performance just isn't there IMO for gaming. so you did good son.

ram speed doesn't really make much of any impact in this scenario, so if youd like to shed a couple bucks, 2133mhz ram would do fine.

at this price range, I think going 250gb on the ssd is worth it. 120gb is fine for a boot drive but being able to put a few of your most used games or programs is a very nice luxury for not a lot of cost. I would check dealsource.tech I saw 250gb Samsung 850 evo drives for like 80USD.

the 1070 simply put, wont hit the fps you want to fully utilize the monitor's potential, although its a tough pill to swallow a 1080 is the only feasible single card that'll do that, and even then, it's close.

if that exact monitor is not a huge deal to you, you just want the specs, then check out the pixio px277. weird brand, excellent monitor excellent price. I have one and love it. no problems

and as far as peripherals go, its personal preference, but you could cut a fair amount of that budget if you had to and Im sure you know that.

if youre trying to find places to cut costs for a gtx 1080, id look at ram moving to 2133mhz, moving to a tower cpu cooler like the 212 evo or the cryorig h7, perhaps a lower priced fan option, and your mouse keyboard options (k70 lux is a great keyboard for the price, and there's a fantastic line of mice from Logitech in the 60USD range that a ton of people are flocking to).

good luck!

I checked out that monitor mentioned and I'm impressed, in terms of fps the gtx 1070 would be fine for 1440p @ 60hz as  I've seen many benchmarks and that all show an average of 70 fps so would this be a better solution for a monitor?

I haven't really seen much benchmarks of 21:9 but 1440p 60hz should be fine for a gtx 1070 :)

To me it sounds like a good combination. But you should probably consult with others to, just be to be sure. Also, you should include benchmarks into your consideration.

it depends what you mean by "better". if you have the gtx 1070 and that monitor, you will have a fine experience at 1440p at a locked steady 60fps, then if/when you add a card or get a new gpu, your monitor will not be obsolete :)
