How much can I overclock a i5 6600k with this build? (or should I use something else)

It depends on your chip. Every chip overclocks differently.

I think something between 4.4 to 4.6 GHz should be doable.

Well you are getting an overclockable chip with a non-overclockable motherboard, so not very far.

You need a z170 mobo and a lot bigger/better psu

Definitely get a Z170 MoBo, base clock doesn't get you nearly as far with your clockspeeds.

Someone recommended an Intel Xeon E3-1231 which would work out much cheaper. How would that compare to an oc i5 6600k?

xeon cant overclock/ well with bus only but screw that

oc i5 will win, xeon is equal to i5 on same clocks

 

if u have an i5 and a xeon both have eaxct the same cores and chips, then they will perform equal, the only difference will be different instructionset in the xeon and features like ecc
