mac is pretty complicated as not too many GPU's are supported driver wise.
Linux I have no idea but I would assume all the mainstream GPU's have drivers. :)

Linux is pretty straight forward, you can use their online search tool to find the driver for your OS, in your case here:

Mac is a different story. There's some unofficial NVIDIA drivers I've used but it's still a gamble. Can't remember where I found mine but this looks like a good resource:

Can't help you with AMD, but Hackintosh from my experience doesn't play nice with it. I would always stick with NVIDIA in terms of software support

For the most part, Linux runs on all GPUs actively supported by Intel, AMD, and NVidia, and most GPUs that have long since been dropped from support. Either GPU will be fine, but the 290 will likely have better driver support.
