the "custom" part means they buy them after you buy the power supply in some sort of sleeving or different colours

Not sure I could say it any better...

 

Custom could more so mean that they were made with a specific purpose in mind, perhaps not what the manufacturer had intended even though it doesn't modify the PSU itself but rather the medium in which the PSU does its job.

I don't so, though a lot of them do tend to be interchangeable.

There might be a compatibility issue. Though again there's also the chance that it'll be fine.

It's up to you. If you don't want the rest of them to be custom, then the 24-pin will suffice. Nothing about the cables themselves make it so that you'd have to replace all or nothing. 

 

Just bare in mind that you have to get compatible cables. The connectors in the modular PSU aren't standardized. They can look similar to others but the pins are beveled and even if they weren't you have no way of knowing the polarity. So the cables have to be compatible with your specific PSU or simple extensions for the cables you already have.
