A game which you may enjoy? I don't know because you haven't said what type of games you like except grinding and progressing,

maybe Ascend Hand Of Kul?

Wait! Darkest Dungeon! Haven't played it my self, but seems really cool, look at the game play of it before you buy it though

You can't have a game forever if you progress, which will mean you will eventually reach the end and complete it :P

if you're looking for offline games then i'd say the elder scrolls V skyrim 
the game itself has TONS of contents,i'm playing it ever since it got released on 2011, i did leave it for periods of time but i always get back to continue playing on my character
if you're interested then i'd recommend having all DLCs,but what makes the game essentially infinite is mods
there are alot of quest mods that are fully voiced that would add dozens of hours of gameplay,there are also mods to improve the game's graphics that would make it so good you'd feel you're playing a final fantasy game

actually there's mods for pretty much anything you'd like to see in the game :D

Fleet wars and CS:GO. hours and hours on end :D 

I spent $2500 on building my PC and all i do with it is play no games atm & watch anime at 1080p(finally) watch YT and write essays...  nothing, it just sits there collecting dust...

black desert... you can grind all day, all week, all year... there's no end to the grind... you'll get bored of it like I did after 2 weeks.. there's just nothing else grind, grind and grind

I know some people nearing level 1000 in Candy Crush... only taken them a few years of their spare time.
