Yeah I think it should work.

I actually couldn't underclock my 5 year old GPU to make it as slow as a next-gen console.

It'll work fine. The only time there's an issue is if the RAM is faster than the maximum supported speed of the motherboard, and even then the BIOS will automatically downclock it to a stable default speed.
