With only a FAST ethernet card you could run a CAT5 cable and not see any depreciation of speed. Until we are talking > 1Gbit then Cat 6 or below is fine. If you want to go higher than go CAT 7. The only way I would advise CAT7 at the moment is if you want to re run cable for your whole house. I would run CAT7 because I wouldn't want to do all new runs in a few years when those speeds are more common.
