I'm pretty sure that for silence, the R5 wins in every case, so far. (No pun intended.)

This video shows a noise sample of the Define R5. It's honestly next to silent when it's closed.

So, just buy one additional fan (exactly the same as the two preinstalled) and that way I can have 2 intakes in the front, one exhaust in the back, and I'm all set?

Paired up with a Phanteks cooler that doesn't even get above 20db and bam? Only hear the whisper of the wind if I get close enough?

Pretty much!

I suggest going Aircooled CPU cooling and a GPU that dosent run too hot for the fans to go baloniez.

Tough if you feel really Dangerous,You could try useing the top 2 modivents for a CPU liquid cooler but make sure its quiet as all devils.

You can mount radiators on any side of the case. Single rad up to 140 in the back, 240 in the bottom, 280 in the front, and 360 in the top. I personally recommend mounting a 240/280 radiator in the front with the rear fan as exhaust.

but that will cost in drive support.

but I guess im that type of builder who loves his drive bays <3

If u are up for water cooling and deadly silence at same time, and don`t want to loose 3.5" for hdds go with define s, without window. functional and way cheaper then both H630 and r5. (define s externally looks the same as r5)

U can mount 140mm rad on the back for cpu (x41 from nzxt for example) as exhaust and use entire front and bottom as intake for fresh air. As they are covered with dust filters.

You can move the drive bays back, or even mount them up top, if you have no use for optical drives and such! I'm just pointing out that there are a million options in the case, and it's incredibly easy to mount things wherever you want. Heck, you can mount the drive cages along the bottom anywhere, thanks to the perforated bottom.

And as Promaja said, the Define S is another option if you don't mind losing your optical drive support. You'll keep some 5.25" bays while getting the full radiator support previously mentioned.
