Frames drop, textures could go away, ect.

If something needs more vram than the GPU has, what happens? Can you share the system memory with the GPU or is that slower?

when the gpu memory runs out it can result in hindered performance and stuttering because it starts to use system memory.

Sometimes the game will straight out crash and say system has run out of memory

What's faster, the GTX 970's slow .5 segment of vram, or the system ram?

 

For the GPU the 0.5GB segment of VRAM is much lower latency and its still higher bandwidth than going across PCI-E to RAM. The main bandwidth for the 3.5GB is 196GB/sec and reading the 0.5GB is 28GB/sec. A 16x PCI-E 3.0 slot is 15.75 GB/s and DDR3 is around 20GB/s total. So its still faster than going to RAM, its also still cached by the L2 cache in the GPU so you get performance benefits from that as well but its still much reduced from the main VRAM capabilities.
