So what are some of the pros and cons in Displayport vs HDMI when gaming? (at 1080p)

None it's just that DP is better for higher refresh rates other than that there's no difference they both do Display and Audio

DP can carry a analog, AND a digital signal. Also like others said, having a locking mechanism, and support for higher refresh rates(only for supported monitors) and GSYNC AND FREESYNC(again, only for supported monitors)

You'll want DisplayPort most likely.

HDMI 2.0 does.

HDMI does not support what you are trying to use, DP 1.2 does, DL DVI does too.
