I don't understand why these companies gave in?

Lavabit didn't give in. Not by a long shot.

 

If he gave in they would have a backdoor into it's services right about now.

Instead he said srew this and terminated his business and 10 years of work.

It's either that or you end up being tried for treason, what would you prefer? The NSA has some serious problems these days, sadly they have the power to get over them by ill means.

Some country needs to start sanctions because this goes way too far since way too long.
