GTX 780 + GTX 570

I'm folding with the same setup, if you fold with the beta/advanced WU's, you should set ypur CPU  to 6, so you leave two cores free to your GPU's. You should get 180K ppd, and 500W of power usage.

Can I fold on my 780 and my 570 at the same time along with my i7.

Yes.

 

Your two graphics cards and your CPU will lose about 10-20% efficiency from all running at the same time, but its possible.

I fell like you are thinking about SLI, that is not what I will be doing. Just running them at the same time, NOT in SLI.

Also to note, folding on NVidia, Core17 or not, hardly takes any CPU utilization. You can fold with CPU:7 with no issues.
