Well since you dont seem sure on overclocking.

 

You mentioned you wanted to do some video stuffs, so i presume it's video editing. so i went with the Xeon E3, you get an i7 pretty much with it just without overclocking, but again if you are unsure about OCing/if it's not for you then this would be a pretty fine build :).

 

also no SSD cause you mentioned you had a kingston one you liked
