im going to build a custom watercooled pc with this loop and im wondering if ill need to buy more than one bottle

1 should be enough but you always want extra in case you spill some or it leaks

also you need to fill it every couple months so you would need to buy a second one later anyway

Yup get two. You will no doubt spill some and you will always need to top-up layer on as the air comes out.
